Ingredients
12-15 Colavita Zucchini slices immersed in Sunflower Oil
500g La Molisana Linguine pasta
4 tblspns Colavita Extra Virgin Olive Oil
2 garlic cloves, crushed
2 tblspns Colavita Capers in White Wine Vinegar
½ cup fresh basil
2 tblspns pine nuts (lightly roasted)
salt and freshly ground pepper to taste
basil leaves for garnish


Recipe Name:  Linguine with zucchini and capers

Serves:  4 people

Time to prepare:  25 min

Method:
In a large pot of boiling salted water, cook linguine according to packet directions until al dente. Drain, return to pot and toss with 3 tblspns of Colavita Extra Virgin Olive Oil.

In a large fry pan (a wok will also do the job), heat remaining Colavita Extra Virgin Olive Oil over medium heat. Add garlic and cook for one minute. Add already marinated zucchini and capers. Cook until zucchini is heater through. Add the linguine to fry pan and toss well. Add the basil and season with salt and pepper to taste. Divide the linguine among four plates. Sprinkle each serving with pine nuts and garnish with fresh basil.
