Ingredients
2kg mussels scrubbed and debearded
4 tblspns Colavita Extra Virgin Olive Oil
4 garlic cloves, crushed
2 tblspns Colvatia Pepper Oil
½ cup chopped fresh parsley
freshly ground pepper


Recipe Name:  pepato di cozze

Serves:  4 people

Time to prepare:  35 min

Method:
Place the mussels in a fry pan, and heat over a low flame until they begin to open. Transfer to a bowl as they open. When all of the mussels have opened, strain the remaining liquid through a paper towel and set aside. Wipe the fry pan clean.

Add Colavita Extra Virgin Olive Oil, garlic and Colavita Pepper Oil to fry pan and heat. Cook for a few minute then add the mussels. Cover and cook for 5 minutes, shaking the pan occasionally. Add the parsley and a generous grind of fresh pepper to serve.
