Ingredients
5 tblspns Colavita 100% Pure Olive Oil
1 cup castor sugar
1 cup plain white flour
¾ cup self-raising flour + 2 tblspns if required
1 tblspn grated lemon rind
2 tspns aniseed
1 tspn fennel seeds
3 x 55g eggs
2 tblspns brandy
1 cup blanched almonds

Recipe Name: Aniseed Biscuits
Serves: Makes up to 35 Aniseed Biscuits Time to prepare: 1 hour
Cooking Time: 40 minutes Method: In a mixing bowl, blend oil and sugar, add eggs one at a time, beating well after each addition. Add brandy and lemon rind and mix well. Fold in flour and mix to a dry dough. Place almonds on oven tray and bake at 150 degrees celsius for 5 minutes or until golden brown. Remove and cool, then chop almonds roughly. Stir almonds and aniseed into dough. Cover and refridgerate for at least 1 hour. Place the dough on baking tray lined with grease proof paper. Shape into a log 30cm x 5cm. Base loaf at 150 degrees celsius for 20 minutes or until lightly golden brown. Remove and allow to cool on oven tray. Cut log diagonally into 1cm slices with serrated knife. Arrange on oven try and bake for another 25 minutes, turning halfway through until golden brown.
Hint: Best to keep in an airtight container to maintain freshness. |
