Gnocchetti di Polenta con Pesto

Polenta gnocchi with pesto


100gr butter
4 eggs
½ tsp salt & pepper (freshly ground)
nutmeg (a pinch)
1 cup of Squisito One Minute Instant Polenta
1 jar of Colavita Pesto (130 gr)
2 tbsp of grated Auricchio Provolone Cheese mild
2 tbsp of grated Auricchio Reggiano Parmigiano Cheese

Cream butter and eggs in a bowl, until frothy, then add salt, pepper, nutmeg (freshly grated if possible) and while using a wooden spoon, begin to slowly pour the polenta, stirring continuously, so that no lumps form. Bring to the boil 4 litres of salted water in a wide casserole. Make the gnocchetti by spooning a little bit of polenta mixture on  a teaspoon and using another teaspoon allow it to drop into boiling water. Cover the casserole and cook the gnocchetti over a moderate heat for ten minutes. Drain gnocchetti, cover with the pesto, add the provolone cheese, and mix gently to blend the flavours. Sprinkle with freshly grated parmesan cheese and serve.

Hint: To vary the dish, use a different sauce like Las Molisana tomato and basil sauce.
