Paesani Arrabbiati


500gr of Squisito Paesani Country Style Pasta
4 tbsp Colavita Extra Virgin olive oil
1 onion finely chopped
4 chillies finely chopped
100gr pancetta (or bacon)
½ cup red wine, Citra Montepulciano D’abruzzo
400gr Squisito Cherry Tomatoes
50gr Auricchio Pecorino Romano cheese freshly grated
salt & pepper
1 tbsp chopped parsley

Cook Squisito Paesani for 20mins in plenty of boiling salted water while making the sauce. Heat oil in a saucepan. When warm, add onion and chillies. Cook for 5mins over medium heat until onion is golden brown. Add the pancetta, stir gently, simmer for 3mins, then add the wine and sauté until wine evaporates. Add Squisito Cherry tomatoes, cook for 15mins or until sauce thickens. Season with salt and pepper to taste. Drain Paesani and return them to the cooking pot. Add the tomato sauce and return pot to the heat stirring gently for 2mins. 

Serve hot in warm dishes and sprinkle with parsley and Pecorino Romano.
